Rava Kesari | Sooji Halwa
Rava Kesari is a traditional delicious sweet which we can make for all occasions.This is the easiest sweet for instant preparation. Yes 🙂 its a quick fix for unexpected guests.I prepared this for Karthigai deepam. I thought of posting a sweet as first recipe. Sentimentally rava kesari worked. Yes this is the first sweet i learnt :). I am very happy to share this recipe here.

Rava Kesari – Ingredients
Rava – 1 cup
Sugar – 3/4 cup
Ghee – 3 tbsp
Boiling water – 2 1/2 cups
Elaichi(powdered) – 1/2 tsp
Cashews – 10 nos.
Raisins – 8 nos.
Color powder – a pinch
1. In a heated pan, pour 1tbsp of ghee,fry cashews and raisins and keep aside.
2. In the same pan, add rava,saute till the nice aroma comes.
3. Then add sugar, it will start to melt in heat. Now add the boiling water little by little and keep stirring to avoid lumps formation.
4. Finally add color powder and Elaichi powder. Blend well and add the remaining ghee, cashews and raisins. It will start to leave the ghee on the sides.Now switch off the stove.
Serve the delicious and yummy sweet as hot/cold decorated with cashews and raisins.
1.Do not over roast the rava. If the color turns to brown, the texture will not be good.
