Ingredients

300 gms Mutton
10 to 15 nos shallots or small onions
3 tbsp ginger garlic paste
1 no Tomatoes
1 tbsp red chili powder
2 tbsp coriander powder
1/4 tsp Turmeric powder
as needed salt
few coriander leaves
To grind
1 tbsp Roasted gram
1 tsp fennel seeds
3 tbsp Coconut
To season
4 tbsp gingelly / sesame oil
1 no Bay leaf
1/2 inch Cinnamon Stick
2 to 3 nos cloves
2 nos cardamom pods
few curry leaves

    Mutton chukka recipe – a lip smacking recipe from Chettinad cuisine. This mutton chukka is very popular starter served in all restaurants, motels, and home. It’s easy to make the dish at home. The name “Chukka”  means dry curry. As for its name, this Chettinad Mutton chukka is in dry form. There are so many variations like Virudhunagar mutton chukka. I never tried that method. But looking forward to making a try as soon as possible. This recipe is famous for its spiciness. But you can reduce it if you want a milder taste.Mutton chukka is best paired with chappati, parotta, curd rice, biryani etc., I am sure it’s a delectable palate for mutton lovers 🙂

    Mutton-chukka-recipe

    Ingredients

    • Mutton – 300gms
    • Small onions /shallots – 10 to 15 nos (finely chopped)
    • Tomato – 1 no (finely chopped)
    • Ginger garlic paste – 3 tbsp
    • Chilli powder – 1 tbsp
    •  Coriander powder – 2 tbsp
    • Turmeric powder – ¼ Tsp
    • Salt – as needed
    • Coriander leaves –  1 tbsp (to garnish)

    To grind :

    • Roasted gram (pottukadalai) – 1 tbsp
    • Fennel seeds (saunf/sombhu)– 1 tsp
    • Coconut – 3 tbsp

    To season:

    • Gingelly oil (sesame oil) – 3 to 5 tbsp
    • Bay leaf – 1 no
    • Cinnamon – ½ inch stick
    • Cardamom – 2 pods
    • Clove – 2 pods
    • Curry leaves – few

    How to make Mutton chukka recipe:

    1. Wash mutton in tap water 3 to 4 times without any impurities.
    2. Add a generous pinch of turmeric powder, mix well and rinse with plain water for 2 times.
    3. Grind coconut, fennel seeds and roasted gram with enough water to a smooth paste. Keep it aside to use later.
    4. Heat a pressure cooker or strong bottomed kadai to cook chicken, add oil once it gets heated, add 1 tbsp of ginger garlic paste, 2 tbsp of chopped small onions and few curry leaves.
    5. chettinad-recipesSaute well and add washed mutton pieces. Stir for a second, add some water and salt. Close with a lid and pressure cook for 4 to 5 whistles.
    6. Check the mutton pieces are cooked after the pressure completely released in a pressure cooker.

    8. Separate the mutton stock and pieces. Use mutton stock for making rasam or gravy.
    9. To make Chukka, heat a kadai, add 2 tbsp of oil, once the oil gets heated, season with bay leaf, cinnamon, cloves, cardamom and curry leaves.

    11. Now add remaining ginger garlic paste, saute till the raw smell goes off.

    13. Once it gets cooked, add turmeric powder, red chili powder, and coriander powder.
    14. Mix well and then add grounded coconut paste.

    16. Once it starts boiling, add cooked mutton pieces, close with a lid and cook till the water gets absorbed completely.
    17. Keep the flame low, stir occasionally to avoid burning at the bottom.
    18. Add excess oil if needed. Once done, garnish with coriander leaves and turn off the flame.

    Notes:

    1. Pressure cooking time of meat depends on the type of meat. If the meat is matured, you have cook for 7 whistles.
    2. You can marinate the mutton pieces with 1 tsp of lemon juice, a little salt and 1 Tsp of red chili overnight to have a tender and juicy meat.
    3. Use small onions and gingelly oil, as it will give an authentic taste of mutton chukka recipe.
    4. Adjust salt and spiciness more or less for your taste.
